Gorgonzola Pear Salad

  • adapted from allrecipes.com
  • 1 head leaf lettuce, torn into bite-size pieces, or spinach
  • 3 pears- any variety, cored and chopped
  • 5-8 ounces Gorgonzola cheese, crumbled
  • 2 avocados - peeled, pitted, and diced
  • 1/2 cup thinly sliced green onions

  • for sugared pecans:
  • 1/4 cup white sugar
  • 1/2 cup pecans, chopped
  • pinch cinnamon
  • Heat the sugar, cinnamon and pecans over low heat, stirring occassionally until sugar has melted and coated the pecans. Cool.

  • for dressing:
  • 1/3 cup olive oil
  • 1 tablespoons red wine vinegar
  • 1 1/2 teaspoons white sugar
  • 1 teaspoons prepared mustard
  • 1 clove garlic, chopped
  • 1/2 teaspoon salt
  • fresh ground black pepper to taste
  • Mix the above ingredients in a blender to mix. Dress the salad just before serving.
